We eat well when we go camping. Mostly that's my fault. This year I made my Mediterranean chicken and I roasted a ham. The weather wasn't such that I wanted to bother with the pineapple upside down cake.

On Saturday night, I cooked a ham. I had a five pound ham in the 8 qt. Dutch oven, with a few potato and yam cubes. I covered the potatoes with crushed pineapple, and the ham with an orange marmalade/amaretto glaze.
Last night I did the chicken dish.

  • Cut up ten chicken breasts (and brown the pieces if you like)
  • fry two pounds of Italian sausage with an onion or two and a few cloves of garlic
  • add to an 8 quart dutch oven with two or three cups of rice, 3 tablespoons chicken bouillon, 2 tsp. crushed oregano, 3/4 tsp. pepper
  • cook until the rice is almost done, then add 3 red peppers and a couple of packs of frozen peas
  • cook for a few more minutes and add 2 dozen cherry tomatoes (halved)
  • cook for five minutes and serve
    feeds 12 campers.

Being single, camping is the only time it's really worth it for me to cook, because there is more than one person eating, so our yearly Memorial Day outing is a good chance to have some fun with it. To most people, camp food is burgers and beans, but I spend a little extra effort to have some good food.

It seems I am legendary. A guy I had never seen before (a friend of an acquaintance) asked, "are you the dutch oven guy?"

Wow, that's cool. I haven't tried to cook real camp food since I tried to haul the ingredients for civilized meals all over Killarney Provincial Park a few years ago. It was a miserable time, and the blackflies kept us from enjoying the food.

Now when we go backpacking we eat everything, and I do mean everything, rehydrated from packets. Even tea and scones. Less interesting for the wildlife, too.

Typically it is a big pot. There are two kinds. A stove top one and a camp Dutch oven. The camp style has stubby legs so you can put coals under it, and a rim around the top so coals don't roll off. You can bake in it. I've made many cakes in them.

They're usually cast iron, but sometimes aluminum.

They come in different sizes. Most are between ten and twelve inches, or six and 8 quarts.
